5 Irish Recipes for St. Paddy’s Day

This collection of Irish recipes makes us wish it was St. Patrick's Day all year long!

1. Corned Beef Hash

When you think of St. Paddy’s Day, corned beef hash is the epitome of Irish comfort food. Start by cooking the beef the day before and let it chill overnight to absorb as much flavor as possible. The next day, shred your cooked corned beef and prepare your hash with potatoes, cabbage, and your other favorite toppings. 

Throw a poached egg on top for an added surprise of flavor that will flow over your hash like lava. Enjoy for breakfast, brunch, dinner or even a late-night snack.

2.  Colcannon

Colcannon is a traditional Irish side dish that is a delicious pairing next to any main course. It is a typical combination of mashed potatoes and your choice of cabbage or kale, but you can take your pick of what you want to include. 

These aren’t your grandma's bland mashed potatoes—these pack a hard-hitting uppercut of flavor using soft and crunchy cabbage, as well as garlic and leeks for added texture and depth of flavor.

3. Grilled Corned Beef Sandwiches

The Reuben, the hot pastrami—whatever you like to call it—you can’t deny the flavor of a hot corned beef sandwich. It isn’t necessarily a traditional meal in Ireland, but they are too tasty to deny! 

Layer thick cuts of corned beef and slices of fontina cheese smack-dab in the middle of two slices of crunchy, buttery rye bread.

If you want to kick out the jams even more, serve with a side of Guinness mustard for dipping. That’s a combination of Dijon mustard, brown sugar, and a healthy pour of beer. Dynomite!

4.  Dublin Iced Coffee

It’s not St Paddy’s Day without a little booze. Dublin iced coffee is a delicious blend of caffeine, dessert, and pure danger. Made with cold-brew coffee, Guinness, whiskey, simple syrup, and heavy cream, it’s a rich and creamy beverage that’s perfect for your Irish celebration. 

While your local bartender might have their preferred brand of whiskey, it would be an insult not to use Jameson. If you like your morning pick-me-up with a little extra kick, all we can say is, sláinte.

5.  Brown Butter Soda Bread

Soda bread should make its way onto every Irish dinner table.  It’s an almost rustic bread that’s so simple to make. It's traditionally made with wholemeal flour, baking soda, salt, and buttermilk. These minimal ingredients make a crusty bread with a savory, nutty flavor that pairs well with a wide variety of foods like soups, cheese, and beer, and can be served with butter, jam, or used for your corned beef sandwich.

This recipe, although not made with traditional black pepper and rosemary, provides a sharp, fresh, and herbaceous flavor that helps uplift any dish you’re serving.
