4 Recipes to Celebrate National Peanut Day

The 13th of September every year is a food holiday for a classic favorite of many: peanuts! Peanuts are such a popular snack, ingredient, and superfood that the average American child will have eaten over 1,500 peanut butter and jelly sandwiches by the time they graduate from high school! As this epic food holiday is approaches year, here are four irresistible recipes to help you make this year’s celebration a memorable one for you and your loved ones—just make sure no one in your family is allergic.

1. Noodles with Mixed Vegetables and Peanut Sauce

This is a vegan, gluten-free, and soy-free five minutes meal! The main ingredients you need for this meal are simple rice noodles and whatever vegetables you choose! Making the peanut sauce is the first step in putting this meal together. For this sauce, you can combine peanut butter, sesame oil, agave, apple cider vinegar, a pinch of ground ginger, and some black pepper in a small bowl and have it stirred.

The next step is to get your preferred brand of rice noodles and place it in a microwave-safe bowl. Add one-quarter cup of water then cover the bowl with plastic wrap and allow the noodles to steam for about two minutes on high heat. When it's cooked, add any vegetable of your choice (feel free to steam them before adding them to the mix). You can include additional protein such as chicken, shrimp, pork, or beef, then add the peanut sauce—and you’re ready to eat!

2. Peanut Butter Banana Bread

To make this delicious bread, you’ll need some oat and almond flour (or you could blend a ¾-cup of oats and one cup of almond to get the flour), three large ripe bananas, one peeled and cored apple, one cup of creamy peanut butter, some white and brown sugar (approximately a ½-cup of each), and, finally, one tablespoon of vanilla extract! Blend all the ingredients together apart from the peanut butter with a good blender until you have a smooth mix. Add the peanut butter to the mix and blend again. Bake in an oven and serve your delicious peanut butter banana bread!

3. Peanut Butter Crunch Bars

This is one dessert that doesn’t require baking! You need good quality chocolate chips (a 1-½ cup should do), some peanut butter (approximately a ½-cup), a cup of white chocolate chips, one cup of lightly crushed pretzels, and three cups of Rice Krispies cereal. To get started, get a microwave-safe bowl, and melt the chocolate in the microwave at intervals until it is melted. Add the peanut butter to the melted chocolate and mix until it’s smooth. Then add in the white chocolate chips, cereals, and pretzels, mixing carefully until it is completely combined. Press the mixture into a baking dish and refrigerate until it is set. Feel free to cut into any shape of your choice, serve and enjoy!

4. Peanut Butter Ice Cream with Coconut Milk

You’re going to need an ice cream machine and raw cocoa butter for this one. You would also need canned full-fat coconut milk, sugar-free sweetener, unsweetened vanilla almond milk, some egg yolks to help make the ice cream creamy without using heavy cream, and some peanut butter. The peanut butter has a strong flavor, and it does a good job of hiding the coconut taste. This recipe is low carb, keto, gluten-free, grain-free, dairy-free, and sugar-free! If your ice cream hardens in the freezer, simply leave it out at room temperature for 15 to 20 minutes to soften before serving.
